The flan is a flat cake from southwest Germany or Switzerland, with a base made of fine shortcrust pastry and a delicious topping of fruit, vegetables or cheese. In some places it is also baked with yeast dough base or puff pastry. The tart is often referred to west of the Rhine as a quiche or tart.
